Keto Irish Potatoes Recipe

keto-Irish-potatoes-recipe made with cream cheese, allulose, coconut and cinnamon. Fun little dessert looks like rustic potatoes

Ingredients:
4oz cream cheese
4 Tablespoon butter
1 Teaspoon vanilla extract
Small pinch of salt
3 Cups Keystone Pantry Allulose
2 Tablespoons Cinnamon
1/2 Cup unsweetened shredded coconut
3 Tablespoons Keystone pantry Allulose liquid

Instructions:
1) make your sweetened coconut by placing the shredded coconut in a small bowl. Mix in the liquid allulose mix well. Wrap bowl in plastic wrap and set aside.
2) Mix cream cheese, butter, vanilla and salt in a stand mixer and beat until fluffy. 2-3 minutes
3 Slowly incorporate the allulose. One cup at a time. Scrap sides of the bowl to make sure everything is mixed Thoroughly.
4) Once your coconut mixture has rested for 15 minutes mix in the coconut slowly.
5) use a small ice cream / cookie scoop to portion out 24 candy balls.
6) Roll ball in your hands to make each one smooth. Refrigerate balls for 30-60 minutes
7) Place cinnamon in a lidded container and shake a few balls at a time in cinnamon.
