Keto Shepherd’s Pie

Ingredients

For the Meat Filling:

  • 1 lb ground beef or ground lamb
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup celery, diced
  • 1/2 cup carrots, diced (optional, for slightly higher carbs)
  • 1/2 cup mushrooms, chopped
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp xanthan gum (optional, for thickening)

For the Mashed Cauliflower Topping:

  • 1 medium head cauliflower, chopped into florets
  • 2 tbsp butter
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare the Cauliflower Mash:

    • Steam or boil the cauliflower florets until tender (about 10 minutes).
    • Drain and place in a food processor or mash well with a hand blender.
    • Add butter, heavy cream, cheddar cheese, Parmesan, garlic powder, salt, and pepper. Blend until smooth and creamy. Set aside.
  2. Cook the Meat Filling:

    • Heat a large skillet over medium heat. Add ground beef (or lamb) and cook until browned. Drain excess fat if needed.
    • Add onion, garlic, celery, carrots, and mushrooms. Sauté for 5 minutes until softened.
    • Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
    • Pour in beef broth and let simmer for 5 minutes. If the mixture is too thin, sprinkle in xanthan gum and stir until thickened.
  3. Assemble & Bake:

    • Preheat oven to 375°F (190°C).
    • Transfer the meat mixture to a greased 9×9-inch baking dish.
    • Spread the mashed cauliflower evenly over the top.
    • Sprinkle extra shredded cheddar on top if desired.
    • Bake for 20-25 minutes, or until the top is lightly golden and bubbly.
  4. Serve & Enjoy!
