Low-Carb Spumoni Recipe
A Classic Italian Dessert, Reimagined
Spumoni is a nostalgic Italian dessert, often served in brick-like slices of layered ice cream with candied fruits and nuts. Traditionally, it’s made with pistachio, cherry, and chocolate ice cream layered together, sometimes folded with whipped cream or custard. While delicious, the traditional recipe is loaded with sugar, candied fruit, and high-carb ingredients that make it off-limits for anyone living a keto or low-carb lifestyle.
That’s where this recipe comes in. By using Keystone Pantry Allulose and a few smart swaps, we’ve created a version that keeps the creamy, colorful, and indulgent character of spumoni—without the sugar spike.
Ingredients & Why We Use Them
Pistachio Layer

1 cup heavy cream – provides richness and body, just like in traditional gelato.

½ cup unsweetened almond milk – lowers carbs while keeping a creamy texture.

Cherry Layer

Chocolate Layer

Directions

Make the pistachio layer:
Heat cream and almond milk in a saucepan until warm. Whisk in allulose until dissolved. Stir in almond extract and pistachios. Chill, then churn in an ice cream maker until thickened. Spread into a loaf pan and freeze until firm. -
Make the cherry layer:
Repeat the same process with cream, almond milk, allulose, and cherry extract. Add natural food coloring if desired. Churn, spread over the pistachio layer, and freeze. -
Make the chocolate layer:
Warm cream and almond milk, dissolve allulose, then whisk in melted sugar-free chocolate and vanilla extract. Chill, churn, and layer on top of the cherry. Freeze until fully set (4–6 hours). -
Serve:
Slice into colorful wedges or scoop into bowls. Garnish with nuts or sugar-free chocolate shavings.
How This Differs From Traditional Spumoni

Sweetener: Traditional recipes use cane sugar, candied fruit, and sometimes corn syrup. We use Keystone Pantry Allulose, which mimics sugar in taste and texture but doesn’t raise blood sugar or insulin.
