🍦 Keto Eggnog Popsicles – Creamy, Low-Carb, and Festive

Eggnog is a classic holiday treat, rich, creamy, and spiced to perfection. Traditional eggnog is loaded with sugar and often served with alcohol, which can spike blood sugar and derail a keto diet. This Keto Eggnog Popsicle keeps all the indulgent flavor you love, while staying low-carb, sugar-free, and keto-friendly. Every ingredient is carefully chosen to maintain creaminess, sweetness, and that iconic eggnog flavor without sugar.


Ingredients and Why We Use Them

  1. Heavy Cream (1 cup)
    Heavy cream is the backbone of our popsicles, providing rich, velvety texture and natural fat. On a keto diet, fat is the preferred fuel for energy, so this helps make the popsicle satisfyingly creamy and filling while keeping carbs minimal.

  2. Unsweetened Almond Milk (1 cup)
    Almond milk is low in carbs and provides a smooth, milky base without adding sugar. Using unsweetened almond milk keeps the popsicles keto-compliant while keeping the texture light and pourable.

  3. Keystone Pantry Allulose (3–4 tbsp)
    Allulose is a natural, zero-calorie sweetener that tastes like sugar but doesn’t spike blood glucose. It allows us to achieve the classic sweetness of eggnog without compromising ketosis, making it perfect for keto desserts.

  4. Egg Yolks (4 large)
    Egg yolks provide natural richness, body, and a custard-like texture. They also contain healthy fats and essential nutrients like choline, while remaining very low in carbs. This is what transforms the popsicles from simple ice into creamy, indulgent custard bars.

  5. Vanilla Extract (1 tsp)
    Vanilla adds aromatic sweetness and depth of flavor. Pure vanilla extract contributes virtually no carbs but elevates the taste to feel indulgent, rounding out the rich creaminess and spices.

  6. Ground Nutmeg (1/2 tsp) & Ground Cinnamon (1/4 tsp)
    These warming spices are traditional in eggnog. Nutmeg gives the signature holiday flavor, while cinnamon adds depth and subtle sweetness. Both are keto-friendly and add flavor without carbs.

  7. Salt (Pinch)
    A small pinch of salt enhances all the flavors and balances sweetness, making the popsicle taste richer and more satisfying.

  8. Optional Bourbon or Rum (1–2 oz)
    Alcohol can be included for a classic adult eggnog flavor. Bourbon or rum adds warmth and depth, and a small amount won’t significantly impact ketosis if used sparingly. For a completely alcohol-free version, simply omit.


How It Stays Keto

  • Low-carb base: Heavy cream and almond milk are naturally low in carbohydrates.

  • Zero-sugar sweetening: Allulose provides sweetness without raising blood sugar or insulin.

Instructions

  1. Heat the base: Combine almond milk, heavy cream, 2 tbsp allulose, nutmeg, cinnamon, and salt in a medium saucepan. Heat over medium-low until warm (do not boil).

  2. Temper the eggs: Whisk egg yolks with remaining allulose. Slowly add a small amount of the warm milk mixture to the yolks, whisking constantly to avoid curdling.

  3. Cook gently: Pour yolk mixture back into the saucepan. Cook on low heat, stirring constantly until it thickens slightly and coats the back of a spoon. Remove from heat and stir in vanilla (and bourbon/rum if using).

  4. Cool: Chill the mixture in the fridge for at least 1 hour.

  5. Freeze: Pour into popsicle molds, sprinkle extra nutmeg if desired, insert sticks, and freeze 4–6 hours until solid.

  6. Serve: Run molds under warm water for a few seconds to release popsicles. Enjoy a creamy, keto-friendly eggnog treat!
