Ingredients

For the Caramel

  • ½ cup Keystone Pantry Allulose – caramelizes smoothly without crystallizing.
  • 2 tbsp water – helps the allulose dissolve and heat evenly.

For the Custard

  • 4 large eggs – provides structure and creates silky custard texture.
  • 1 ½ cups heavy cream – adds richness and smoothness.
  • 1 cup unsweetened almond milk – reduces carbs while staying creamy.
  • ½ cup Keystone Pantry Allulose – sweetens without crystallizing.
  • 1 tbsp vanilla extract – classic flan aroma.
  • Pinch of salt – enhances sweetness and flavor.

Instructions

Step 1 — Make the Keto Caramel

  1. Add ½ cup allulose and water to a saucepan.
  2. Heat over medium until melted and amber (7–10 minutes).
  3. Immediately pour into a 9” dish or ramekins.
  4. Swirl to coat the bottom.

Step 2 — Make the Custard

  1. Preheat oven to 325°F.
  2. Whisk eggs gently – avoid frothing.
  3. Add heavy cream, almond milk, allulose, vanilla, and salt.
  4. Strain mixture for ultra-smooth texture.
  5. Pour over caramel.

Step 3 — Water Bath

  1. Place baking dish into a larger pan.
  2. Fill outer pan halfway with hot water.
  3. Bake 45–60 minutes (center will jiggle like gelatin).

Step 4 — Chill & Serve

  1. Cool to room temperature.
  2. Refrigerate at least 4 hours or overnight.
  3. Run a knife around edges; invert onto a plate.
