Instructions

Step 1 — Make the Keto Caramel

  1. Combine ½ cup allulose and 2 tbsp water in a small saucepan.
  2. Heat over medium until golden amber (7–10 minutes).
  3. Pour caramel immediately into a 9” flan dish or ramekins, swirling to coat evenly.

  1. Preheat oven to 325°F (160°C).

  3. Whisk in heavy cream, almond milk, ½ cup allulose, espresso powder, cocoa powder, vanilla, and pinch of salt until smooth.

  5. Pour custard over caramel layer in dish or ramekins.

Step 3 — Bake in a Water Bath

  1. Place flan dish in a larger pan; fill outer pan halfway with hot water.

Step 4 — Chill & Serve

  1. Cool to room temperature, then refrigerate at least 4 hours or overnight.
