  • 1/2 cup powdered Allulose
  • 1/2 cup Key lime juice
  • 1 tbsp lime zest
  • 1/2 tsp unflavored gelatin powder (dissolved in 2 tbsp warm water)

Instructions

  1. The Base: Line an 8×8-inch pan with parchment paper. Mix all crust ingredients until a dough forms. Press firmly into the pan and chill in the freezer.
  2. The Bloom: Sprinkle gelatin over 2 tablespoons of warm water. Let sit for 5 minutes, then microwave for 10 seconds until clear. Cool slightly.
  3. The Filling: Beat cream cheese and sweetener until fluffy. Blend in sour cream, lime juice, and lime zest.
  4. Combine & Set: Stream the liquid gelatin into the mixture while stirring. Pour over the crust, smooth the top, and refrigerate for at least 4 hours.
