Keto Bavarian Crepes with Keystone Pantry Allulose

Ingredients:

  • For the Crepes:

    • 1 cup almond flour
    • 2 tablespoons Keystone Pantry Allulose
    • 4 large eggs
    • 1/4 cup unsweetened almond milk (or any low-carb milk of your choice)
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon salt
    • 2 tablespoons melted butter (for cooking)
  • For the Bavarian Cream Filling:

    • 1 cup heavy cream
    • 1/2 cup Keystone Pantry Allulose
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon (optional)
    • 2 tablespoons gelatin (preferably grass-fed)
    • 1/4 cup cold water

Instructions:

  1. Prepare the Bavarian Cream:

    • In a small bowl, sprinkle the gelatin over the cold water and let it bloom (sit for about 5 minutes).
    • In a medium saucepan, heat the heavy cream, Keystone Pantry Allulose, and vanilla extract over low to medium heat. Stir occasionally until the sweetener is dissolved and the mixture is warm.
    • Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved.
    • Once the gelatin is dissolved, remove from heat and allow it to cool slightly. Refrigerate for at least 2 hours to let it set into a creamy consistency.
  2. Make the Crepes:

    • In a medium bowl, whisk together almond flour, Keystone Pantry Allulose, eggs, almond milk, vanilla extract, and salt until smooth.
    • Heat a non-stick skillet over medium heat and melt a little butter to coat the surface.
    • Pour a small amount of the crepe batter (about 1/4 cup) into the pan and swirl to spread it evenly.
    • Cook for 1-2 minutes on each side or until golden brown, then remove from the skillet and set aside. Repeat with the remaining batter, adding butter to the pan as needed.
  3. Assemble the Crepes:

    • Once the Bavarian cream has set, gently stir it to loosen up the texture.
    • Spoon a generous amount of the Bavarian cream onto the center of each crepe.
    • Fold or roll the crepes to enclose the filling.
    • Optionally, dust with a little more Keystone Pantry Allulose or a sprinkle of cinnamon for extra flavor.
