🫐 Keto Blueberry Popsicles – Sweet, Refreshing, and Sugar-Free

Why These Work for Keto

  • Blueberries: Naturally low in carbs and high in antioxidants, they add flavor and color without spiking blood sugar.

  • Keystone Pantry Allulose (or your favorite keto sweetener): Gives natural sweetness, keeps popsicles soft (not icy), and has no glycemic impact.

  • Heavy Cream & Almond Milk: The mix gives creaminess without too many carbs.

  • Vanilla Extract & Lemon Zest: Brighten and balance the flavor.


Ingredients (makes about 6 popsicles)

  • 1 cup fresh or frozen blueberries

  • 1 cup unsweetened almond milk

  • ½ cup heavy cream (for creaminess)

  • 3–4 tbsp Keystone Pantry Allulose (adjust to taste)

  • 1 tsp vanilla extract

  • 1 tsp lemon juice (or zest for brightness)


Instructions

  1. Blend – In a blender, combine blueberries, almond milk, heavy cream, allulose, vanilla, and lemon juice. Blend until smooth.

    • For a more chunky texture, pulse instead of blending completely.

  2. Taste & Adjust – Check sweetness and add more allulose if desired. Remember that frozen treats taste less sweet once frozen.

  3. Strain (optional) – If you want a smooth popsicle, strain through a fine mesh sieve to remove blueberry skins.

  4. Pour & Freeze – Pour mixture into popsicle molds. Insert sticks and freeze for at least 4 hours, preferably overnight.

  5. Unmold & Enjoy – To release popsicles, dip mold in warm water for a few seconds before pulling them out.


Tips & Variations

  • Swirl it: Add a few spoonfuls of unsweetened Greek yogurt into the mold for a pretty blueberry-cream swirl.

  • Extra fruity: Fold in a few whole blueberries before freezing for bursts of fruit.

  • Dairy-free: Swap heavy cream for full-fat coconut cream.

  • Gourmet touch: Add a pinch of cinnamon or basil for a unique flavor twist.
