🍒 Keto Cherry Popsicles – Low-Carb, Fruity, and Refreshing

Nothing says summer like a fruity popsicle—but traditional popsicles are loaded with sugar and fruit juice, making them a no-go for keto. This Keto Cherry Popsicle keeps all the fruity flavor you love while staying low-carb, sugar-free, and keto-friendly.

These popsicles are perfect for a hot day, after a workout, or as a guilt-free dessert. Plus, they’re incredibly simple to make at home!

Ingredients & Why They Work for Keto

  • 1 cup frozen unsweetened cherries
Cherries are naturally lower in sugar than many fruits and packed with antioxidants. Using unsweetened cherries ensures we don’t add extra sugar, keeping the carb count low. Frozen cherries are convenient, and they help give the popsicle a nice texture.

  • 1/2 cup water or unsweetened almond milk
Water keeps it simple and very low-calorie, while almond milk adds a creamy texture without the carbs. Unsweetened almond milk has almost zero net carbs, making it perfect for keto.

  • 2–3 tablespoons Keystone Pantry Allulose
Allulose is a rare sugar that tastes just like sugar but doesn’t spike blood glucose or insulin. It adds sweetness without kicking you out of ketosis. Adjust the amount based on your cherries’ natural sweetness.

  • 1 teaspoon lemon juice
A little acidity brightens the flavor and balances the sweetness. Lemon juice has very few carbs, so it won’t affect ketosis but makes the popsicle taste fresh and fruity.

  • Optional: 1/4 teaspoon vanilla or almond extract
Extracts deepen flavor without adding sugar or carbs. Almond extract pairs beautifully with cherries to mimic a maraschino cherry flavor.

  • Optional: 1–2 tablespoons heavy cream or coconut cream
If you want a creamy popsicle, cream adds richness and fat—perfect for keto. Fat slows digestion and helps keep you full while staying low in carbs. Coconut cream is a great dairy-free alternative.

Instructions

  1. Blend your ingredients
Combine cherries, water or almond milk, allulose, lemon juice, and any optional extracts or cream in a blender. Blend until smooth.

  2. Taste & adjust sweetness
Cherries vary in sweetness, so taste the mixture. Add a little more allulose if needed.

  3. Optional: strain
For silky-smooth popsicles, pour the mixture through a fine mesh sieve to remove cherry skins and pulp.

  4. Pour into molds
Divide evenly among popsicle molds. For a creamy version, gently swirl in cream for a marbled effect.

  5. Freeze
Insert sticks and freeze for at least 4–6 hours, or until fully set.

  6. Serve & enjoy
Run molds under warm water for a few seconds to release the popsicles easily.
