Instructions

Step 1: Make the Chocolate Mousse

  1. Melt the chocolate: In a heatproof bowl, gently melt the chocolate using a double boiler or microwave (in short 15-second bursts, stirring in between).

  2. Whip the cream: In a separate bowl, whip the heavy cream with allulose, vanilla, and salt until soft peaks form.

  3. Fold together: Once the chocolate has cooled slightly but is still liquid, gently fold it into the whipped cream until fully combined and smooth.

  4. Chill: Refrigerate the mousse for about 20–30 minutes to firm up slightly.

Step 2: Make the Whipped Cream

  1. Whip: Beat the heavy cream, allulose, and vanilla together until soft peaks form. Keep chilled until ready to use.

Step 3: Make the Keto Chocolate Crumbles (Optional)

  1. Mix ingredients: In a small bowl, mix almond flour, cocoa powder, allulose, melted butter, and salt.

  2. Bake: Spread the mixture on a small baking sheet lined with parchment and bake at 325°F (163°C) for 7–9 minutes until slightly crisp. Let it cool — it will harden more as it cools.

Step 4: Assemble the Parfaits

  1. Layer: In a glass, layer a spoonful of chocolate mousse, followed by a dollop of whipped cream, and sprinkle of chocolate crumbles. Repeat until the glass is full.

  2. Top it off: Finish with extra whipped cream, a sprinkle of cocoa powder, a few keto chocolate chips, or even a fresh raspberry if you want a pop of color.
