Master Keto Beignet Base Recipe

This master keto beignet base creates authentic New Orleans–style texture while staying keto and diabetic friendly. Designed to fry or bake beautifully, this dough becomes everything from powdered classics to bacon-cheddar brunch bites.


The Origin of Beignets

Beignets originated in France and made their way to Louisiana with French settlers in the 18th century. In New Orleans they became legendary, traditionally served hot and buried under powdered sugar — most famously at Café du Monde.

Classic versions rely on wheat flour and sugar. This keto version recreates that same pillowy interior using low-carb flours and allulose.


Ingredients

  • 1½ cups almond flour (super fine blanched)
  • 2 tablespoons coconut flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • Keystone Pantry Allulose – ¼ cup
  • ¼ cup heavy cream
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Whisk almond flour, coconut flour, baking powder, and salt.
  2. In another bowl whisk eggs, allulose, cream, butter, and vanilla.
  3. Combine wet and dry ingredients until soft dough forms. Rest 3–5 minutes.
  4. Roll dough between parchment to ½-inch thickness. Cut into squares.
  5. Fry at 350°F for 2–3 minutes per side or bake at 375°F for 12–15 minutes.
